The date is exact rather than chosen. The armistice that stopped the fighting of the First World War took effect at eleven in the morning on the eleventh day of the eleventh month, 1918. The United States marked it as Armistice Day until 1954, when Congress changed the word to Veterans Day so that it honored everyone who had served, not only the men of that one war.
The distinction people most often get wrong is worth stating plainly. Veterans Day is for all who have served, living and dead; Memorial Day in May is for those who died. The poppy comes from a poem, John McCrae's In Flanders Fields, written in 1915 - an American teacher named Moina Michael read it, began wearing one, and campaigned until the flower became the symbol.
