The word probably comes from a silver mine. Mexican miners in the eighteenth century used the word taco for the little paper-wrapped gunpowder charges they pushed into holes in the rock face, which look very much like a filled tortilla rolled up. The food sense appears in print much later, in the 1890s, which fits.

The hard shell is American. Tacos in Mexico are soft, and the pre-formed fried shell was a device for making them at scale a long way from a tortilla press; Glen Bell built a business on it in southern California in the 1950s. Cilantro is the other dividing line, and that one is genetic: a variation in a cluster of smell receptor genes makes the leaf taste like soap to somewhere between four and fourteen percent of people, depending on ancestry.
