Button, cremini and portobello are the same species at three ages - the price changes, the mushroom does not. The prized ones resist farming: truffles, morels and matsutake mostly still have to be found, which is why they cost what they do. Several have poisonous lookalikes, so foraging is a skill learned from a person, never from a picture.

They are closer to animals than to plants. Fungi do not photosynthesize; they digest what is around them, and the mushroom itself is only the fruiting body of something much larger living in the soil or the wood. The organism can be older than the trees above it.
