Lokum is what the rest of the world calls Turkish delight, and the English name is an accident of trade. A British traveler in the nineteenth century shipped it home under that description, it became a fashionable gift, and the Turkish name, which means morsel of comfort, never crossed over. The confection itself is starch and sugar cooked together for hours until it sets.

Dondurma is the stretchy one. Ice cream thickened with salep, a flour ground from wild orchid tubers, and mastic resin from Chios, it is chewy enough to be cut with a knife and is traditionally served by a vendor who makes a performance of not handing it over. Demand for salep has put enough pressure on the orchids that Turkey now bans its export.
