Most of this list is milk, reduced. Khoya is made by simmering milk in a wide pan for hours, stirring constantly, until it thickens to a solid, and burfi, peda, kalakand and a dozen others are what you do with it afterward. It is the reason Indian sweets taste of dairy rather than butter or chocolate, and the reason a halwai's shop smells the way it does.

The Bengali ones on the list work differently and arrived later. Sandesh, rasmalai, pantua and rasabali are made from chhena, the curd you get by deliberately splitting milk with acid, which older Hindu cooking avoided because spoiling milk was considered wrong. The technique is generally credited to Portuguese settlers in Bengal, who had been making cheese that way at home, and Bengali confectionery was rebuilt around it.
