The idea behind a list like this one is the glycemic index, worked out by David Jenkins and his colleagues in Toronto in 1981. Instead of counting carbohydrate, they measured how quickly each food raised blood glucose against a reference, and the ranking surprised people: some plain starches behaved much like sugar, and several sweet foods did not.

Barley and oats sit low on that scale because of beta-glucan, a soluble fiber that turns the contents of the gut into a gel and slows everything moving through it. Quinoa is on the list for a different reason, and it is not a grain at all: it is the seed of a plant related to spinach and beets, which is why it cooks in a quarter of the time most cereals need.
