Beans feed the soil as well as the people. Their roots host bacteria that pull nitrogen out of the air and fix it into a form plants can use, which is why almost every traditional crop rotation puts a legume between two cereals, and why the same three-sisters planting of corn, beans and squash turns up independently across the Americas.

Two of them carry a real warning. Raw or undercooked kidney beans contain a lectin strong enough that five of them can cause several hours of violent illness, and a slow cooker that never reaches boiling makes it worse rather than better; ten minutes at a hard boil destroys it. Fava beans are dangerous to a different group: people with an inherited enzyme deficiency common around the Mediterranean, for whom eating them can trigger severe anemia.
